New York Strip Steaks

I was wandering through my local Costco meat section yesterday and a I couldn't get my eye off of this gorgeous pack of New York Strip steaks. I knew immediately that for dinner I had to have one of these steaks. When I left Costco I noticed that it was snowing! What a great evening... grilling in the snow! Here's what I did!

Ingredients:
1 New York Strip Steak
Salt
Pepper

I began by starting with high heat in the grill. To do this, I added about 55 charcoals to my Weber Chimney. After the coals ashed over, my thermometer at the top of the kettle read approximately 450 degrees. Perfect for my steak.

It is never too cold to grill!
Perfect grilling weather!



Sometimes I'm in the mood for a really simple steak. Today was a salt and pepper day. I simply sprinkled salt and pepper on both sides of my huge steak.

Once my grill was heated to the appropriate temperature I added my steak over direct heat. Now this is where things can get tricky. A Costco NY strip is about a 2 inch cut. For a 2 inch thick steak you need to be careful b/c you can severly burn the outside and still have a raw inside.

Here's what I do:

Place the steak over direct heat for 5 min.
Flip the steak over for another 5 min of direct heat.
Remove the steak from direct heat and place it in indirect heat for 6 min.
Flip the steak over for another 6 min of indirect heat.

This program should result in a medium cooked steak.

Now to be honest, this flame up wasn't really this intense! This is a result of a long camera exposure at night.

And there we go. A great meal! Take note of that potato. My favorite potato is one from Outback Steakhouse. They manage to get salt to stick to the outside of the potato! If you want to see my Outback Steakhouse potato recipe Click here!
