Grilled Hot Wings

There is a little bar in Baltimore called Kislings Tavern. The best wings I've ever had! In an attempt to recreate Kislings wings I came up with this recipe.

Ingredients
1 bag of wings (or a few packs of drumsticks and wings)
1 bottle of Franks Original Hot Sauce
1 stick of butter
1 head of garlic
Parmesan Cheese
Tabasco sauce

I began by starting a medium fire in the grill. To do this, I fill my Weber Chimney about 1/2 way full. When the coals are lit, I dump the coals on one side of the grill. This creates a hot zone and a cold zone. I always cook my wings in the cold zone. This is referred to as indirect cooking and it will ensure that you don't burn your wings. I kept the temperature at about 350 degrees for about 45 minutes. This will get the wings to an approximate internal temperature of 170-180 degrees. At about 45 minutes, I move the wings over the coals to get the skin crispy just like they were deep fried. The photo below shows the final minutes when the wings were placed in direct heat.

To make the sauce I add together 1/2 cup of Franks hot sauce, 1/3 cup of butter, about 5-10 cloves of garlic (minced), a few tablespoons of parmasan cheese, and a few spashes of tabasco sauce. I simmer these ingredients in a sauce pan and then transfer to a large bowl.

Add the wings to the bowl and toss around! I have not had better wings, well outside of Kislings that is!
