I love Outback Steakhouse's potatos. They magically get the salt to stick to the skin. It took me a few months to figure this one out but I think I'm pretty close.
Kosher or Sea Salt
Melt a little bit of butter in a small bowl. About a tablespoon, maybe a bit less. Then use a brush and paint the skin of your potato with the butter. Liberally sprinkle the salt on the skin of the potato and bake at 425 degrees for 1 hour.
