Salt and Pepper Wings

Salt and Pepper grilled wings -

Simple and basic is what this recipe is about. The amazing flavor of grilled chicken sometimes goes unnoticed because of all the crazy rubs and sauces we tend to slather all over. This is the perfect last minute recipe because the ingredient list is so simple: salt, black pepper, white pepper, oil, and chicken. Check this out!

The dry rub is simple: 1 tablespoon black pepper, 1 tablespoon of white pepper and 2 tablespoons of kosher salt. White pepper?! What!? White pepper is very similar to black pepper but it has a bit more of an earthy tone. It's hard to describe but it seems a bit milder to me and provides a neat depth when used in combination with black pepper. Don't have white pepper? I think you'll be just fine to use 2 tablespoons of black pepper instead.

When I grill wings I usually start with frozen or at least partially frozen wings. To make grilling them easy I set up the grill for two zone grilling: direct heat area and indirect heat area. I start the wings on the indirect side until they are mostly cooked and then finish them by charring over the direct heat.

After about 20-30 minutes of indirect heat, depending on how hot your grill is, the wings will be mostly cooked. They'll probably be about 120-130 degrees internal temperature. That's just a guess! Don't hold me to that. Using tongs move the wings over the direct heat. Take some extra virgin olive oil and brush oil all over the wings. Be careful as too much oil will cause some serious flame ups. Just lightly brush enough oil on so the salt and pepper rub will stick. Using your fingers grab some of the dry rub and sprinkle it all over the wings. Turn them over and repeat.

If you see any areas of the wings that don't have any oil or salt and pepper, repeat the process again: brush oil and then sprinkle some salt and pepper. Once the chicken wings reach 165 degrees internal heat (or if you know they are done by looking at them) remove them from the heat and give them one last sprinkle of the salt and pepper rub.

I used store bought blue cheese dressing for this one. I have however made homemade blue cheese dressing and I love it! That said, today is all about simple, so I was fine with the bottle of blue cheese. I chopped up some leftover celery and there we had it. I loved this recipe. You taste nicely seasoned crispy grilled chicken wings and the spicy heat from the pepper blend. This is a real basic recipe that lets you appreciate the fact that you just grilled wings!

  • 2 T Kosher Salt
  • 1 T White Pepper (ground)
  • 1 T Black Pepper (ground)
  • 2-3 T Extra Virgin Olive Oil
  • 1 Bag Chicken Wings

Cooking Directions

  1. Mix together the dry rub ingredients. When wings are almost done brush them with olive oil and generously sprinkle with the salt and pepper dry rub. Flip the wings over direct heat and again brush with oil and sprinkle with the rub. Serve with blue cheese dressing and celery.
